Ingredients
- 3/4 cup of pumpkin puree
- 3/4 cup of natural almond butter
- 1 1/4 cups of vanilla protein powder
- 1 1/2 tablespoons of pumpkin pie spice
- 1/2 teaspoon of salt
Instructions
- Line a bread pan with parchment paper and set it aside.
- In a medium-sized mixing bowl, add the pumpkin puree and almond butter. Mix these ingredients well until well-combined and smooth.
- Add in the protein powder, pumpkin spice, and salt. Mix well to combine. The mixture will get crumbly initially, but then combine together in a large dough ball. The consistency should slightly thicker and dryer than cookie dough. If necessary, add a little bit more protein powder to make the dough less sticky.
- Press the mixture into the bottom of your pan. If you'd like, put the dough in the fridge for about 15 minutes until it becomes firm.
- Cut the bars into 6 equal-sized pieces.
- Serve, enjoy, and store the bars in your refrigerator for up to a week in an air-tight container.
